Meet Helivaldo: coffee grader and taster

Helivaldo Ferreira de Castro is the rockstar of the Sancoffee lab. From coffee to music, Helivaldo brings curiosity and passion to what he does. Learn more about his work in ensuring quality, supporting producers, and aspirations for 2025.

What drives you as a person?

I’m always motivated by learning, new experiences, and sharing knowledge. Growth is a constant process, and I love being able to pass on what I’ve learned to others.

What's your background?

I grew up on a rural farm where my father was a coffee grower. I studied business management and accounting, but when I joined Sancoffee in 2009, I started in the administrative sector. Over time, I got the chance to explore and assist in the quality control department, which became my passion and my career. Since then, I’ve taken various courses, including becoming a Q-Grader in 2015, and I actively participate in coffee quality research at the Federal University of Lavras. I’ve also been involved in coffee competitions - both roasting and selecting top coffees from across Brazil. One of the things I love most is sharing my knowledge, whether through courses or hands-on training.

What do you do at Sancoffee?

My role at Sancoffee is all about evaluating coffee to guide producers and partners in improving their lots for sale. I grade coffee based on appearance, quality, and sensory attributes to match customer demands. I provide guidance on quality-related logistics processes and work on initiatives to elevate the quality of our coffees.

What does impact mean to you?

Impact is any action that creates transformation - new ideas, prosperity, and care for the people and processes around us.

How do you like your coffee?

I enjoy coffee in many ways, but my go-to is a V60 pour-over. That said, I also love experimenting with different brewing methods and coffee-based drinks.

What do you love most about your job?

The best part of my work is contributing to a shared goal - helping to elevate coffee quality for everyone involved. And, of course, getting to taste some truly incredible coffees!

What’s your passion or hobby outside of work?

Music is my biggest passion outside of coffee. I play several instruments, have been part of bands, and even taught music. For me, playing music is a way to relax and recharge. I also love cooking at home - another creative outlet that brings me joy.

What do you feel most excited about 2025?

I’m really looking forward to a fresh way of presenting our coffees to clients - an approach that makes it feel like they are introducing the coffees themselves to their customers.
