Meet Ramon: Quality Lab Coordinator

Ramon has been part of Sancoffee for over a decade, growing from a coffee classification assistant to the coordinator of the Quality Control Lab. In this blog, he shares his journey, what drives him, and how quality control plays a key role in supporting producers and delivering excellent coffees to the world.

What drives you as a person?

Our job is to support producers by evaluating and guiding their coffees so that each lot reaches its full potential. When that coffee arrives at the client’s roastery, it should deliver the quality we all worked for. That’s what drives my work every day.

And also the people. Here at Sancoffee, we’re more than coworkers - we’re a family. That sense of connection and respect makes a huge difference in my day-to-day.

And at home, my daughters are my biggest source of motivation. My family inspires me to grow, to be a better father, and a better person. They’re the reason I show up every day with energy and purpose.

What's your background?

I don’t have a formal academic degree, everything I’ve learned has been through hands-on experience, internal training, and external courses in the specialty coffee world. My path has been built through consistency, curiosity, and being open to learning wherever I go.

What do you do at Sancoffee?

I’ve been working at Sancoffee for 12 years. I started as a coffee classification assistant and, over time, I fell in love with the profession. I kept learning, improving, and took every opportunity to grow in the field. Today, I’m the Quality Control Coordinator and lead a team of six people in the lab.

I’m also a Q Grader and international judge for the Cup of Excellence. Most of my training came from within Sancoffee and through partnerships with organizations like BSCA and SCA.

I like to say that quality control is really an extension of the farms. Our job is to support producers by evaluating and guiding their coffees so that each lot reaches its full potential. When that coffee arrives at the client’s roastery, it should deliver the quality we all worked for. That’s what drives our work every day.

What does impact mean to you?

To me, impact means helping someone or a community move forward, creating positive change. Whether it’s through the feedback we give producers or the coffees we help improve, I believe our work here has a ripple effect. And I’m proud to be part of that.

How do you like your coffee?

A double espresso. No sugar. It’s how I start my day, every day.

What do you love most about your job?

What I enjoy most is the fact that no two days are the same. Every coffee is different, and I love discovering the small details that make each one unique. Working with something that brings me joy and connects so many people around the world is a privilege.

What’s your passion or hobby outside of work?

Football, for sure. I play on the weekends to stay active and meet up with friends. It’s part sport, part therapy. And whenever I can, I head to the stadium to support my favorite team, Cruzeiro. The energy of a live match is like nothing else!

What do you feel most excited about 2025?

Every harvest brings new challenges, and I see each one as a learning opportunity. I’m really excited about the quality of the coffees we’ve already started tasting this year, and I feel optimistic about what’s ahead.
